Content that is dated and chronological: blog entries, news items, announcements. They are filed under categories and tags, and appear from the most recent to the oldest.
Pages
Content that is fixed and timeless: “Home”, “About”, “Contact”. They carry no date and form the permanent structure of the site.

Simple rule: if it is dated (a news item), it is a post. If it is permanent, it is a page.
